Use kebab-case for bridge arguments (#1036)

* Updates bridge CLI arguments to be kebab case

* Updates scripts to use kebab case for bridge initialisation and relaying of headers/messages

* Updates message sending subcommand to be kebab case

* Updates documentation for message sending subcommand
