Rebrand: polkadot → pezkuwi build fixes

- Fixed TypeScript type assertion issues
- Updated imports from api-augment/substrate to api-augment/bizinikiwi
- Fixed imgConvert.mjs header and imports
- Added @ts-expect-error for runtime-converted types
- Fixed all @polkadot copyright headers to @pezkuwi
