chore: add documentation, test configs and subxt examples

- Update .gitignore for local Claude files and generated artifacts
- Add MAINNET_ROADMAP.md with deployment phases
- Add zombienet test configuration files
- Add Pezkuwi-specific subxt examples for token transfers
