chore: remove the unused pezkuwi-config/chains.json copy

Nothing in the build, the code or the workflows reads this file; the app
fetches chains from pezkuwi-wallet-utils (CHAINS_URL in runtime/build.gradle).
The copy had not changed since February and still carried Nova's Infura
project keys in its Ethereum node URLs.
